I have PS CS, I also just use any selection tool and then drag and drop to my layout - though a copy (ctrl-C) and paste (ctrl-V) would work equally well after selecting the letter.

I didn't see anyone answer your second question about the color of the other alpha changing. The alpha would be the color shown on the preview *unless* it is a translucent alpha - it should say in the description.
